I made the "spring forward" socks for my mom for Christmas. It's a really cute little pattern and a very fun knit. Just two lace rows to remember and keep track of. (http://www.ravelry.com/patterns/library/spring-forward-3)
I agree with the Spring Forward socks. Easy enough pattern, but with enough interest to keep you going! I also love Cookie A's Monkey socks: http://www.ravelry.com/patterns/library/monkey I'm not sure why this pattern goes so fast, but I've never finished a pair faster than my monkeys!
I love Monkey socks by Cookie A. Knitting another pair. For a basic sock pattern you cannot go wrong with Yarn Harlots pattern in Knitting Rules. I use a pattern from my head, one I learned from an aunt in 1980! Whoops...oh well, good design never goes out of style!
I haven't made them yet, but I have Cookie A's Monkey socks in my knitting queue--pattern and yarn ready to go...now I just need to find the time! If you do make them, I will interested to see how it goes. I love the green socks. They look so comfortable.
